Support Infrastructure The "community kitchen" idea was beautiful. I see it as giving a chance for the homeless to call something their own and begin the process of reconnecting as contributing members of society instead of staying in the "just survive mindset."
What about other bits in the infrastructure?
Let's say a "Charity Chapel" to begin. This "chapel" would be a small sanctuary dedicated to them to remove the stigma often associated with attempting to worship in a church which only tolerates their presence.

Ooh. Meat would have to be donated, so maybe mostly vegetarian/vegan recipes and meal plans for when there is no meat?
What about composting? The homeless might probably have enough trash for that ... and they can sell what they can't use up over the Summer/Greenhouse gardening.
They can set up stands to sell whatever vegetables/fruit can't be used/stored for the Winter months. ... ... They would need canning supplies. (Could dehydrate meals for Winter as well.)
There are a number of cookbooks for this as well. (Or, used to be.) They're mostly for emergencies and camping, but would work great for the homeless. Just add hot water.
Just keep playing around with the keywords to see if you can find even more ideas for MREs and Dehydrated Meals that will store for a long time. (Over Winter.)
Re: Support Infrastructure They could have a flower garden on the land and put together arrangements to sell on the roadside stand (just like the farmers who sell watermelons).

Learn what talents they have, and ask them to donate something that can be sold to profit the charity. (A "One Time" right. Or a "Six-Months" right. They retain their copyright. The Charity is just 'borrowing' the right for a limited time frame.)
Re: Support Infrastructure There could be a communal community space for exercising and arts & craft time. For home schooling, and for adult classes.
Some crafting ideas I have:
Quilting Bees ... Sell the quilts when finished. (Or, once every bed in the community has one, then start selling them?)
Jewelry Making Get Togethers ... sell the finished jewelry. (Can buy or seek donated jewelry making books. Do Google searches.)
The experienced people can help teach those who want to participate. ... There could be mechanic classes. Resume classes. Cooking classes. Arts & Crafts classes.
There should be a communal work office where people could type up their resumes, or have someone do it for them. They could trade off?
It could be somewhat like a 'hippy' commune, only the goal is to become independent? *shrugs* Get off the street, get a job, get an apartment/home, etc.
